Who doesn’t love a warm, rich baked good? I’d say most of us do!
BUT, when we think about it, 3 things come to mind…
(at least they do for me)
Those 3 things usually stop me in my tracks, especially #3. 😒
What I absolutely love about this recipe is that it is super easy (everything gets mixed in one bowl) it only has a few ingredients and it is healthy! It keeps me going (with zero sugar crash) because it’s the perfect balance of healthy fats, protein and carbs.
Chocolate Banana Nut Bread
2 bananas
1 cup nut butter
1 scoop Chocolate Complete
1 egg
1 teas. baking soda
splash milk
Mash bananas, mix with egg, add remaining ingredients. Pour into a greased loaf pan, bake 30 min. at 350 degrees. Let cool slightly and enjoy!
Tips for the Best Results!
First, I normally use frozen bananas. I let them thaw most of the way then snip the opposite end of the stem and squeeze out the banana “puree.” This is handy for smoothies too.
Almond butter will yield a more moist bread but I usually have peanut butter on hand, so I go with that. It’s still so yummy and moist. I have also used 1/2 almond and 1/2 peanut. I’m sure you could use sunflower butter and it would be just as delish. You can also add chopped nuts for extra goodness.
For vegans (the Complete shake mix is vegan) you can substitute your egg for flax or chia, whatever you’d normally do.
I use coconut or oat milk for the splash of milk. Make it even easier and use whatever you have on hand.
